Healthy Salad Recipe

It’s hard to eat healthy in Winter with all of the yummy and carb-loaded foods ready to warm you up from the inside out! We love this chicken salad because it’s super healthy but still fills us up on a cool day.

• 170g chicken breast
• 1 large handful of baby spinach
• 1 small orange
• 2 tablespoons pomegranate seeds
• ¼ small avocado
• ½ tablespoon cold-pressed extra virgin olive oil
• Cumin
• Oregano
• Pepper

• 1 tablespoon Greek yoghurt
• ½ tablespoon cold-pressed extra virgin olive oil
• ½ tablespoon Dijon mustard
• 1 tablespoon apple cider vinegar or white wine vinegar
• Juice of ¼ lemon

1. Cut chicken breast into bite size pieces, bring fry pan to medium heat, put the olive
oil and chicken into the fry pan.
2. Add cumin, oregano and pepper to taste.
3. Put all salad ingredients into a large bowl and add chicken on top.
4. Slice avocado into thin slice and garnish
5. Combine all dressing ingredients into a bowl and whisk well or into a blender and
blend until smooth.
