Zucchini Bruschetta Recipe

Feeling like something light and healthy for lunch? We have a great, full-flavoured vegetarian recipe that will be a hit amongst the family: Zucchini Bruschetta.

Preparation Time: 5 Minutes

Cooking Time: 15 Minutes


  • 3 Zucchinis (Halved and Sliced)
  • 2 Garlic Cloves (Minced)
  • Pinch of salt
  • Squeeze of Lemon Juice
  • Thyme
  • Goats Cheese


To cook, simply fry the zucchinis and garlic together in a pan with a pinch of salt for 15 or so minutes. The zucchini should cook down and being soft and tender, mash together if desired. Turn off the heat, check the seasoning and add salt more if needed.

Then add in a squeeze of lemon juice while the pan is still hot, stir through. Set aside.

Prepare some toasted whole-grain sourdough slices and add zucchini mixture evenly between the bread. Top with a sprinkle of thyme and soft goats cheese. Serve immediately. Bon Appetit!

This recipe is for 2 people, however quantities can be double to serve 4, or to have left overs for the next day!
